Product was placed in unit between 9-10 am and was embargoed and discarded at the time of inspection. Please maintain TCS foods at or below 41 *F at all times.
Butter and buttercream frosting was observed at 76 *F on countertop. Per person in charge, butter was removed from walk-in cooler at 10:00 am to soften for bread and buttercream frosting was prepared that morning and was stored at room temperature. Person in charge returned to walk-in cooler. Softening butter at room temperature is allowed as long as the prep and baking process is completed within a 4 hour window from the time the butter is removed from refrigeration. Buttercream frosting may not be maintained at room temperature and must be stored under refrigeration at all times.

Person in charge stated items had been placed on display at 9:30 am (Observed at 1:50 PM.). Products were embargoed and discarded at the time of inspection. Foods on time as a control must be sold or discarded within 4 hours to prevent bacterial growth.
