In the reach in cooler by the prep sink, observed Southwest ranch with a discard date of 6/15. Please ensure all TCS food items are date marked properly and used or discarded no more than 6 days after their day of preparation for a total of 7 days. PIC voluntarily discarded the out-of-date foods at the time of inspection (see embargo).

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability ------ Observed heavy pitting on the epoxy flooring in and around the dish pit area. Observed exposed aggregate rock in the unsealed areas and pooling water. Discussed having the floor repaired to restore a smooth and easily cleanable surface prior to the next routine inspection. PIC stated repairs are anticipated to take place in July.
