Description: Food-Contact Surfaces: Cleaned and Sanitized

Comments:

PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Addl Notes: Observed dishwasher dispensing 0 ppm of chlorine sanitizer in final rinse. All chemical dishwashers must dispense 50-100ppm of chlorine in final rinse to ensure sanitization of food contact surfaces. Upon inspection, sanitizer bucket was empty. Bucket was changed and a concentration of 50 ppm of chlorine was achieved. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed TCS (time and temperature controlled for safety) foods in the walk-in with internal temperatures ranging from 50-54*F when measured with a probe thermometer. Observed TCS foods in the reach-in units on the serving lines with internal temperatures ranging from 45-48*F. Food on the serving line had come from the walk-in earlier that morning. According to manager, walk-in went down overnight and was fixed earlier that morning. Ambient temperature of the walk-in was 41*F at time of inspection. All TCS foods stored in the walk-in were embargoed at time of inspection. All TCS foods must maintain internal temperatures of 41*F and below to prevent pathogen growth. Corrective Action: Corrected at time of inspection. Observed lettuce and spring mix in the reach-in crisper drawers on the serving line with internal temperatures of 47-49*F when measured with a probe thermometer. According to manager, lettuce had been placed in the crisper drawers from a reach-in unit on the line earlier. Reach-in unit was functioning properly. Lettuce was moved back to reach-in unit at time of inspection. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed lettuce crisper unit with an ambient temperature of 45*F when measured with a min/max thermometer. All cold holding units must maintain ambient temperatures of 41*F and below. A re-inspection for crisper drawers will be conducted by 5/7/26. Corrective Action: Correct prior to re-inspection.

Comments:

6-501.111 (A-B, D) - Core: Controlling Pests; Monitoring Addl Notes: Observed many fruit flies in the dishwashing area. Observed fruit flies on the serving line with fruit flies inside of arugula in the reach-in cooler. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by the next routine inspection. Corrective Action: Correct prior to next routine inspection.

"A" for Food Safety

Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.

How does it work?

The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.

How can I determine the grade?

The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.

Definitions

Priority Violation
Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
Priority Foundation Violation
Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
Core Violation
Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
Cutting Edge Program
All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
