Observed several TCS foods in walk-in cooler not being maintained at proper temperature. Walk-in contained
packaged tofu, cooked sticky rice, shell eggs, raw beef, and raw chicken. Tofu measured 50*F with inspector
probe thermometer, cooked sticky rice measured 52*F, shell eggs measured 52*F , raw beef measured 47*F,
raw chicken measured 48*F. Person in charge stated that the eggs and tofu were delivered 2 hour prior to
inspection and that the beef and chicken were pulled from freezer 2 hours prior to inspection. Person in charge
moved tofu, eggs, rice, beef, and chicken to other unit and covered with ice packs to bring temperature back to
below 41*F. Discussed with person in charge that refrigeration units need to be maintained at 41* or below to
prevent the growth of pathogens.

Observed walk-in cooler with an ambient temperature of 58*F. All TCS foods were moved to alternate cooler at
time of inspection and were within safe time/temperature parameters. Discussed importance of maintaining
cooler at 41*F or below to ensure TCS foods are kept at proper temperatures. Repair cooler as needed so it is
holding at 41*F or below prior to re-inspection.

deemed a certified food protection manager was present at time of inspection.
Discussed using ice packs on cold table line to better manage surface temperatures.
