Observed sushi rice at 85F and sushi rolls at 50-60F. Per PIC the rice and rolls were made at 12pm. Per PIC, 4 hour time as control was used but no policy or documented times were provided. PIC documented the times. TCS food must be stored at 41F or below when cold holding.

Observed no consumer advisory for raw salmon and tuna used for the sushi rolls. Examples were shown via internet to the PIC. Please provide and place near the sushi station.

Upon re-inspection, all violations were not corrected.
No County legal action will result from this inspection.
A new email contact was provided to inspector for contact purposes.

A pattern of non-compliance is developing for Priority violation # [20 ], [P-3-501.16(A)(2) and (B), which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.

Inspection report was emailed to the PIC.

OF NOTE: A re-inspection will occur on 9/3. A training inspection was offered to the PIC. Physical copies of cooling methods, temperature control, food storage, hand washing, and time as a control documents were provided to the PIC.
