Please address the following prior to permit issuance, Re-inspection scheduled for August 16, 2021:
1. Provide an ASSE 1013 reduced pressure zone assembly backflow device for water line that feeds the carbonators for the soda bib systems. RPZ should be installed post filter but pre mix for carbonator. RPZ will need a drain cup that is plumbed to floor sink with 1 inch air gap.
2. Provide ASSE 1022 dual check valve for any coffee/tea/ water fed drink machines.
3. Reroute drain line from ice machine to floor sink. Ensure that slope is at least 1/4 inch per foot to allow for drainage. Ensure that a 1 inch air gap is provided at floor sink.
4. Remove garbage grinder at 3 compartment sink.
5. Install taller splash guard in between prep sink and sink that has garbage disposal. The splash guard must come up to height of splash, so please provide splash guard that comes up to height of stainless steel back splash.
6. Install dishwasher. Ensure that trough drain between disposal and dishwasher is not removed during installation. Ensure that all areas are resealed to wall and that drain lines to floor sink maintain 1 inch air gap.
7. Provide chemical dispenser at mop sink with a true air gap. Current dispenser has sleeved air gap (1055B) and will need to be replaced with 1055 A as discussed.
8. Provided brighter lighting in all walk-ins.
9. Walk-in on right side will need to have rust and sealed with rust inhibitor.
10. Repair/reseal walk-in thresholds to floor.
11. Reseal hand sink in ladies restroom to wall with silicone or caulk.
12. Paint wood behind soda bibs with semi or high gloss paint.
13. Repair exhaust fans in employee bathrooms.
14. Remount partition in men restroom, it is starting to come off of wall.
15. Provide soap and paper towel at all hand wash sinks.
16. Refill grout in dishwash area where grout is low or missing.

A certified food manager is required at time of approval. If not already obtained, please obtain your certified food manager certificate from an ANSI approved testing company. All other food handlers must obtain ANSI approved food handler certificates.

No County legal action will result from this inspection.
