Description: Non-Food-Contact Surfaces Clean

Comments:

4-601.11(B) and (C) - Core: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Addl Notes: Noted the doors and gaskets of the reach-in refrigerator at the front food service were heavily soiled with food accumulation. Inside the walk-in freezer, heavy built up of ice forming inside the condenser unit, on the ceiling and floor of the unit. Noted water pooling underneath the soda station. Numerous paper towels were used to try soaking up the spillage but not removing or properly cleaning the area. Please clean frequently to prevent built up. Corrective Action: Correct prior to next routine inspection.

4-602.13 - Core: Nonfood Contact Surfaces Addl Notes: Noted floor sinks have thick accumulation of organic matter. Please clean and maintain. Corrective Action: Correct prior to next routine inspection.

The water valve at the mop sink does not dispense hot water and the hot water valve at the food prep sink does not turn. Repair/ replace prior to re-inspection. Corrective Action: Correct prior to re-inspection.

PRIORITY VIOLATION-5-202.13 - Priority: Backflow Prevention, Air Gap

Addl Notes: Corrective Action: Correct prior to re-inspection. Noted the drainpipe from the walk-in cooler is inside the floor sink. The 3-compartment sink is directly connected to the sewer. Provide indirect connection to the sewer via an air gap. For the walk-in unit, shorten the drainpipe to provide at least 1" air gap from the end of the pipe to the floor. For the 3-compartment sink, provide a hub drain or riser for this sink's drainpipe. See attached pictures of hub drain and riser. Noted the bleed line from the water filter is not rigid and laying inside the floor sink. Provide rigid manifold (PVC) to feed the drainpipe in and route the pipe to the floor sink with minimum 1" air gap. from the finished floor.

PRIORITY VIOLATION-5-203.14 - Priority: Backflow Prevention Device, When Required

Addl Notes: Corrective Action: Correct prior to re-inspection. Noted the water connected oven was not provide with a backflow preventer for the water line. Provide a reduced pressure zone (RPZ) assembly (ASSE1013) at the water connection point of the oven. Provide a drain cup for the vent port of the backflow preventer. Drainpipe must be rigid and indirectly discharge to the floor sink with minimum 1" air gap from the finished floor. Certify all testable backflow preventers (RPZ for soda also) and provide reports.

5-205.15 (B) - Core: System Maintained in Good Repair; Maintained Addl Notes: Corrective Action: Correct prior to next routine inspection. Noted the soda carbonator's pump is leaking water. Please call for service.

6-201.13 - Core: Floor and Wall Junctures, Coved, and Enclosed or Sealed Addl Notes: Corrective Action: Correct prior to next routine inspection. Noted the walk-in cooler is not sealed around the condensation pipe's penetration. Please seal. Noted ice built up inside the condenser, on the floor and ceiling of the walk-in freezer. Seal all penetrations from exterior and interior of the unit. Clean up the ice forming. Walls at mop sink and prep sink have multiple wall openings. Seal/ patch and maintain.

"A" for Food Safety

Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.

How does it work?

The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.

How can I determine the grade?

The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.

Definitions

Priority Violation
Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
Priority Foundation Violation
Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
Core Violation
Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
Cutting Edge Program
All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
