Addl Notes: Observed dish tub and dishes in the hand sink across from the cook line. Hand sinks must be kept clear at all times to ensure proper handwashing is taking place and hand sinks are available. Dishes were removed from hand sink at time of inspection. Addl Notes: Observed dishwasher dispensing 0 ppm of chlorine sanitizer in final rinse. Observed sanitizer line hooked up to rinse aid instead of sanitizer. All chemical dishwashers must dispense 50-100 ppm of chlorine sanitizer to ensure proper sanitization of food contact surfaces. Three compartment sink was set up with bleach sanitizer at time of inspection. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed cooked green chilis in the refrigerated drawers on the cook line with an internal temperature of 49*F when measured with a probe thermometer. According to chef, green chilis had been in drawers overnight. Green chilis were discarded at time of inspection. Observed cooked onions, mushrooms, and container of cooked chicken breast with internal temperatures of 44-46*F. Items had gotten warm from cooked chicken being placed in the same drawer. Chicken was removed and items cooled to below 43*F at time of inspection. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed cooked pork int he walk-in with a date mark of 8/23. According to employee, pork was prepared on that date. According to owner, pork is cooked every 2-3 days and the label on the container was not updated. All ready-to eat TCS (time and temperature controlled for safety) foods must be labeled with the preparation date within 24 hours. Pork was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed blanched french fries on the cookline at room temperature with no time stamp. According to owner, fries are on a 4 hour time as control policy. Food on time as control must be labeled with the discard time, 4 hours from when the food is removed from temperature control. Fries were labeled with the discard time at time of inspection. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed cooked chicken in the reach-in refrigerated drawers underneath the cook line with an internal temperature of 55*F. According to cook, chicken had been cooked and placed in the drawer 2 hours prior. All cooked food must be cooled to 41*F in the walk-in before being placed in cold holding units. Hot food in the drawers can overload the equipment and cause surrounding food to become warm. Chicken was moved to walk-in to cool at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed designating the 2 compartment sink at the bar as a handwashing sink and using it only for hand washing. Discussed time as control written policy and displaying or keeping it easily accessible to employees. Inspection report delivered via email.
"A" for Food Safety
Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.
How does it work?
The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.
How can I determine the grade?
The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.
Definitions
- Priority Violation
- Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
- Priority Foundation Violation
- Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
- Core Violation
- Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
- Cutting Edge Program
- All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
